some kind of bread... and Chicken drummies

Sunday Dinner
featuring:
chicken
another version of fake bread- we'll see how this turns out.


The browned drummies in the pot- added the onions and tomatoes.

Chicken Drumsticks
heat coconut oil

dredge drumsticks in rice flour, salt, pepper
place in hot oil to brown (5 min. per side)
lightly sprinkle on flaxseed meal and paprika

add onions and tomatoes to pan after browning
cook for @ 30 min. or until done
The juice from the tomatoe, onion, and drippings.


Chicken Drimmies ready to eat!

Fake biscuits!
 Bread recipe
1 C brown rice flour
3/4 C oat flour
@ 2 T ground almonds
@ 1/2 T flaxseed meal
1 tsp cinnamon
1t salt
3t baking powder
2t xanthan gum

1 stick butter
@ 1/4 C cream cheese
@ 1/4 C sour cream
1/2 lemon- freshly squeezed juice



make into flat bread shape on cookie sheet 
bake at 385 for 5 min. reduce heat to 350 until done

This held together better than some of the breads I have been making, and we thought it was worth making again.

after tasting- the suggestions were more cinnamon, and adding stevia for a sweeter version. We thought the sweeter version might be nice for a dessert biscuit- with strawberries and whip cream!

sliced radishes in vinegarette with rosemary
To make vinegarette mix acv (apple cidar vinegar), olive oil, kosher salt

Cucumber wedges with freshly made hummus
Hummus
Soak chick peas overnight, cook down with garlic
In food processor mix chick peas, juice of one lemon, @ 1 tsp kosher salt, olive oil until you get the right texture
dip- or dressing with pea pods









Dip Recipe
equal parts plain greek yogurt, sour cream
chopped tomatoes
cucumbers
onion
garlic
rosemary
Turkey cabbage soup
Turkey Soup
add to pot Variety of veggies including; onions, cabbage, tomatoes
Add pre cooked turkey
Simmer in organic chicken broth
Add tomatoe sauce, or diced tomatoes

spaghetti squash- with butter and nutmeg

choiced for salad dressing substiitue
lemon juice with kosher salt
tomatoe, cuke dip
radish with vinegarette

Baked beans soak mixed beans overnight.  Drain, cover with fresh water- cook down for about 3 hours adding water as needed. Bake in oven about 30 min. Can add onions, salt, tomatoe, green pepper.






This meal served with baked beans (can have beans 2 weeks into phase 1).
fresh salad- lettuce, radishes, tomatoe, pea pods, avacado topped with lemon and salt
dip-
hummus (made this morning)
lftover spaghetti squash and tomatoe sauce from last night
