Jamie's scrambled eggs in the morning, apple walnut cake at night...

Jamie fixed delicious scrambled eggs for breakfast.
He used colored peppers, bacon, onion, and threw in some of the leftovers- rice and tomato. Loved it!

peel 'em up

butter, walnuts, olive oil-  I melted them together a bit in the oven, then stirred in some oat flour and flax meal

sliced apples on top (2 green apples), pop it back in the oven while you make the batter
making the batter- coconut flour, oat flour, soda, powder, salt, cinnamon, nutmeg, allspice, ginger, 2 eggs, coconut milk, 3 pkg of stevia 
Wow! This is a wonderful treat!

Pesto flat bread, and icing for the cookies


We are having leftover lasagna tonight, so I made some bread to go with it. I'm not so sure I remember what all I put in it, or how much... Next time I will measure and pay better attention. I had too many distractions.

Pesto Flat Bread

1 c oat flour
1 c garbanzo bean flour
1 t salt
1 t baking soda
1 t baking powder
1 1/2 t xanthan powder
2 T flax meal

1/4 c pesto (I had some of my parsley pesto left)
1/4 c sour cream
1 1/2 T minced garlic
1 T minced sundried tomatoes
2 beaten eggs
1/2 c coconut milk

Spread on the stone pizza pan, press down with parchment paper- it's pretty sticky
Bake at 375 for 10-15 minutes

Cut into thin slices- Yum!

Yesterday's pretend oatmeal cookies needed a little something more...
Cream Cheese Icing 

beat together:  Cream Cheese, butter, cinnamon, stevia, lemon juice squeezed from 2 wedges

whip it up!


Wanna cookie? with icing? Nice treat for the sugar deprived!

Lasagna and Pretend Oatmeal Cookies

add the rice lasagna

mix the ricotta with the egg

shred the cheese

ingredients ready to layer

Lasagna *reminder- cheese is phase 2*

Rice Lasagna noodles-  boil for @ 10 minutes

Ricotta Cheese- mix with 1 egg

Shredded Monterey Jack Cheese

Tomato Sauce

Saute 2 green peppers, garlic, 1 sweet onion, 1 lb. ground turkey, add 6 tomatoes cook some more
Pour in 1 can diced tomatoes, and 1 small can tomato paste
Spice it up with salt, pepper, basil, oregano, 2 bay leaves

Layer it all together
Pop into 350 oven for 30 minutes
Turned out great!

Pretend Oatmeal Cookies


1/2 c butter
2 eggs
1 t  vanilla
1/2 c greek yogurt
3 droppers full of stevia

3/4 c coconut flour
3/4 c brown rice flour
1 c oatmeal
2 t flax meal
1 t salt
1 t baking powder
1 t baking soda
1 t cinnamon
1 t nutmeg
1 t ginger

mix
blob small spoonfuls on cookie sheets
Bake at 375 for 8 minutes

comments: I may have accidently put in the salt twice :) Next time I will try to remember to add xanthan gum, and maybe some sour cream or apple sauce for more moisture. Maybe I could make shift some kind of cream cheese frosting.

Surf and Turf


Gathering ingredients.  Salad for starters...I had a coupon for a free bag of salad today at Krogers. I love their coupons there. Of course, I way over paid for something else- maybe it evened out... I can't believe how much groceries cost. When we were first married we could eat for 2 weeks on $25. We couldn't afford meat. We ate a lot of rice and eggs! Eating out was a huge luxury, but on Fridays we had a coupon to Noble Romans Pizza! Is that place even open any more? It's was in Terre Haute, IN.

Strip steak- kosher salt, ground pepper- rub it into each side of the steak then grill 'em up
@ 5 min each side, then let it sit a bit before serving
I almost always set off the smoke alarm when I do this! I forget to leave the fan on after it's done cooking...

This rice is so easy, and so good! I love it with salsa too!



Peppered Rice
3 c water
1 1/2 c basamati rice
1 bag frozen mixed peppers and onions
bring to boil
simmer for @ 30 minutes until water is absorbed-keep an eye on it









For this vegetable dish, make sure to carmelize the onions- it's so good that way!
stir up some onions, zucchini, summer squash in olive oil
add kosher salt, ground pepper, dashes of apple cider vinegar
simmer while steak and fish are cooking
This is an easy way to make so many fish dishes. I love it with the Tony's Creole spice- I learned about that from Sara W. <3 After coating the fish, grill it, or broil it, or pan fry. I grilled it this time. It's very short timing on each side- maybe 2 minutes. Don't overcook! Squeeze lemon on top and serve with  homemade Mayo. Delicious!

It's really classy to serve right out of the pan isn't it? What can I say? Why dirty yet another dish?

Cheese biscuits


Gathering ingredients
 Cheese biscuits

3/4 c coconut flour
3/4 c oat flour
2 big t flaxseed meal
1 t xanthan gum
1 t baking soda
1 t baking powder
1 t kosher salt

mix dry ingredients together

1/2 c butter

cut in butter

1/2 c sour cream
1/2 c greek yogurt
1 t apple cider vinegar

mix in wet ingredients

bake in 350 oven for 30 minutes

remove from oven and brush on butter, sprinkle with garlic powder, sprinkle with cut up colby cheese

return to oven until cheese melts


Here's most of the stuff that goes in- I don't think I added the stevia however- changed my mind

Flour Tower

oven ready- Baked it like this for 30 min, then brushed with butter, sprinkled on garlic powder and a little bit of cheese
The results are in. It looks like it's had an oil spill, or it's been splatter painted. Next time I might try adding the cheese to the dough- I just didn't want to use a lot of cheese yet since that's a phase 2 item.

Casserole- turkey and leek

Casserole

heat olive oil in dutch oven
brown ground turkey 1 or 2 lb.
add chopped up leeks, celery, green onions
pour in enough beef broth to simmer awhile

season with kosher salt, and ground pepper
add about 1/4 c apple cider vinegar (I use Braggs)

into liquid add 1/4 cup butter
@1/4 cup oat flour
@1/4 cup flax meal
until thick

take off of heat
pour in @ 1 cup almond milk
stir in 1/4 cup homemade Mayo

turn into a casserole dish
bake at 350 for 30 minutes
It's a cold, icy day outside- good day for comfort food!

Spices, herbs, oils, vinegars

Thought you might like a peek inside my messy spice cupboard...  I know, I know I need a bigger cupboard or less spices.  I sure have a lot of Kroger brand spices- I shop there a lot :)

Not so sure about all the dishes!

All this cooking requires a lot of dishes!
The blender, the juicer, and the food processor are getting quite a workout! I feel like I am washing them over and over and over...

Salad on the Side

Eggs, olives, chicken, tomato, cucumber on top!

Hard to resist!
Served with chili and carrot bread. Used the dip, or mayo, or... 

lemon dressing was added to Dr. OZ site looks easy and good!
ADDED TO RECIPES ON FRI 02/18/2011
Ingredients
2 tbsp of olive oil
1 tbsp of fresh lemon juice
1 clove of garlic, finely chopped
Salt and pepper to taste

Directions
Pour over wild salmon fillet, chicken or other favorite lean protein, broil for 10-15 minutes depending on thickness of the protein.

Chicken Chili


Hmmm... Let's see if I can remember what's in it. This was made from a bunch of leftovers

Pinto Beans (the kind you soak overnite- so be sure to think ahead and cook them down the day before)
Chicken, Onions, Garlic (from leftover roasted chicken)
9 Veggie soup (leftover)
1 can diced tomatoes
1 1/2 T Chili Powder
add some cheese and sour cream, Yum!
