Breakfast, Lunch, Dinner...

A typical breakfast seems to be either eggs, or oatmeal- we are falling into a pattern.
For lunch today we were craving peanut butter and jelly. So, here is my improvise:

chop almonds in the food processor

stream in olive oil
To make Almond Butter-
Put almonds in food processor and chop- stream in olive oil until smooth (mine turned out a little runny).
I added a very more almonds in the end, so there would be a little more texture- chunkyness.
I also added a pack of stevia, and some kosher salt

mix almond butter with ricotta cheese

sliced strawberries

smoosh them up

spread the almond mixture on rice cake, top with strawberries

Tah Dah! PBJ- in a way...

Sausage Dinner with penne, leeks, guacamole salad

Great sausage from Whole Food. We had chicken, turkey, and pork. Thanks Judy!

Boil the sausages for awhile in a pot.  Drain water and brown the meat in a little olive oil.  Add onions, green peppers, garlic to the pot.  Brown, then simmer in a little beef broth.

We eat a lot of tomatoes! Yum!

Chop and wash
Boil in a big pot until limp
Add salt, pepper, apple cider vinegar

blend together in food processor:
avacado, tomato, onion, sour cream, garlic

Dinner!
leeks, penne, pesto, sausage with green peppers and onions, bean soup,
salad with  guacamole

In food processor mix parsley, walnuts, black olives, garlic, salt, pepper.  Stream in olive oil until creamy.

Bean Soup

Soak beans overnight. Boil beans with 2 chopped onions, and 6 chopped tomatoes. Salt and pepper to taste.

Tonight was basically a repeat of last night, more steak, more fish, more salad, more, more, more! Topped off with the pecan cake with strawberries and whip cream.

 Ingredients: blueberries, rasberries, blackberries, rice milk, cinnamon, ginger,  greek yogurt,  ice, and stevia

Tuesday means Family dinner with lovely company!

Nothing like a full table! We love it. Lots of help in the kitchen, Yeah! Had to repeat surf and turf, so easy and so good. Strawberries with pecan cake for dessert.

Creamy Pecan Cake

1/2 cup margarine or butter
3 dropper fulls of stevia
2 eggs

3/4 cup coconut flour, 3/4 c brown rice flour
1 teaspoon baking soda
1/2 teaspoon salt
1t baking powder
2 heaping t of flax meal
1/2 t xanthan powder
1t cinnamon
1 t nutmeg
1 t allspice
1 t corriander
1 T poppyseed

1 cup ricotta cheese
1/2 cup greek yogurt
1 can thai coconut milk
1/2 cup chopped pecans 

Takes @ 60 minutes at 350F in my oven

Cheese Sauce

Make rue of 1/4 c butter, 1/4 c brown rice flour, salt, pepper
Slowly add 2 c rice milk
Melt in @ 5 oz cheese (monterey jack, and colby)
I added a bit of whipping cream to thin it some more

1 can diced tomatoes
@ 1 T finely chopped garlic
@ 2 T apple cidar vinegar
@ 1 T celery seed
Kosher salt, ground pepper
1 dropper full of stevia (I think maybe a little less next time)
cook this down at a simmer until most of the liquid is reduced
I might have added some green pepper, onion, and another spice- can't remember, I'll try it again soon and make sure I write it all down better! This was a big hit for dinner with the kosher hot dogs.

Tomato Cuke Parsley Salad

Chop up veggies- parsley, tomatoes, cucumber, green onions
Add sliced olives
Pour vinegarette over the dish- stir and shake together

Serve with spinach leaves- So good!

Vinegarette

Olive oil
Apple Cidar Vinegar
a little lemon juice
K Salt, G Pepper
Mrs. Dash Lemon Pepper
1 pkg stevia

Mix together just before pouring on salad

Scarborough Fair Meatballs (Parsley Sage Rosemary and Thyme), and spinach salad with lemon

adding all the ingredients to the bowl
Meatballs -

2 lbs Ground Turkey

chop up the following veggies:
1 Bunch of Parsley 
3 Stalks of Celery 
1 Green Pepper
2 Onions
2 T of Garlic

@ 1 t each:    Sage, Rosemary, Thyme, Kosher Salt, Ground Pepper

3/4 Cup Garbonzo Bean Flour
1/4 Cp Flaxmeal
1/2 Cup Rice Milk
2 Eggs

Mix all together
Form into meatballs and place on cookie sheet

bake at 375 for 20 minutes

Spinach Salad

Spinach leaves
cucumbers chopped up
parsley chopped up
top with lemon juice, olive oil, 
sprinkle with a bit of salt
