going green...

Tonight Grandma hosted her Club at her end of the house. We made the potato soup, rueben sandwiches, and green mint shakes- NOT on the Candida Diet! but we modified the soup so we could have some.  
***NOTE: Potatoes are Phase 2, If you are in Phase 1 leave out the potatoes! We are pretty happy to be adding some food items from phase 2- potatoes, cheese, etc. We are still being very careful! Mainly- no sugar! We are mostly eating MEVY (meat, eggs, vegetables, greek yogurt).

then simmered in chicken broth

For Candida Diet- add rice milk to the soup
I cook my bacon in the oven when I am going to do a lot of it.
This bacon is to crumble on top of the soup.

This is not for the Candida Diet people! but aren't they cute!

assortment of pre-dinner dips. rosemary and garlic in greek yogurt, carrot dip, pesto. Today I went to Whole Foods and picked up some hand dipped  ricotta cheese, creamy cream cheese from Zingermans- really good with the pesto... Tried them all on the mini muffins, carrots, celery, apple wedgies, and flaxseed crackers. It's fun to try all the different flavors.

Dinner! Meatballs, rice, leeks, acorn squash, carrot bread, apple custard, Yum!

Breads, custard, simple dinner

1 C almond butter, 1 C ricotta cheese, 1 C oat flour, 1 egg, 1 t baking powder

 Slight Revisions to the carrot bread... see labels for recipe

ginger with the nutmeg and cinnamon, oat flour instead of rice flour,
added whipping cream to make the batter not quite so thick

Baked in a cake pan, topped with shredded carrot, chopped walnuts,  cinnamon, 1 pkg stevia

Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar (I used Stevia)
  • 1/2 teaspoon salt
  • 1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk (I used whipping cream)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • ground nutmeg

Sliced apples with 2 dips
Almond Butter (see labels for recipe)
Carrot Dip- Shredded carrots blended into 1/2 C ricotta cheese and 1/2 C sour cream, and a bit of nutmeg

Simple dinner- Guacamole salad- Assorted lettuce and spinach, chopped celery, alfalfa sprouts, chopped tomatoes, guacamole dressing (see labels for recipe)
