2 day highlights

grilled pork chops- oh so good!

hummus and rice chips
Hummus recipe-
soak chick peas overnite,
cook down in water  until tender,
add to food processor along with onion, lemon, garlic
stream in olive oil (light variety)

baked beans and cabbage soup
baked bean recipe-
soak pinto beans overnight,
cook down in water until tender,
add onions, canned diced tomatoes, garlic, seasoning
bake for 30 minutes at 350

yogurt mustard salad dressing
mix together yogurt, dry mustard powder,  sea salt and garlic,
ground pepper, rosemary, lemon juice, olive oil, stevia

parsley pesto
mix in food processor
parsley, onion, green onion, walnuts, lemon juice
stream in extra virgin olive oil (light flavor)

yellow tomatoes with hummus :)

salad and more salad
This salad is FULL of goodies!
iceburg lettuce, raddicio lettuce, spinach leaves
carrots, celery, green peppers
onion, parsley, green onion, sprouts
tomato, hard boiled egg
small bits of corned beef and porkchops
Served with cabbage soup and strawberry smoothie, love it!

Boiled dinner!

Jamie made the most wonderful boiled dinner tonight and I forgot to take a pic of it! But here is what's leftover... It looked a lot better plated, and it was delicious!
Boiled dinner is super easy and so so good! Just put it all in a pot, cover with water, boil, bring down to a simmer and boil for about 3 hours. Wait to add potatoes if you don't want them too mushy. Jamie made a lot, so he divided it into 2 pots.
Not so sure about corned beef on the candida diet???? and remember potatoes are in phase 2. carrots are starchy so don't overdo the starches! But it was a nice treat tonight. 
I put some apple cider vinegar and ground garlic and sea salt on my cabbage, Yum!

I think I will try to adapt this on to our diet somehow. It sounds so good. dry mustard, and stevia with apple cider vinegar in a mix of yogurt and sour cream, hmmmm... might make an interesting glaze.

I have found a new way to serve corned beef that my whole family loves and you can eat just about any kind of side dish with it. We love to eat it this way in the summer with a baked potato or a pasta salad. You cook the corned beef the same as you would any other time. When it is nice and tender place it on a foil lined baking sheet. Mix together approx. 1 cup of brown sugar adding enough yellow or brown mustard to make it a moist glaze.Glaze the beef and put under the broiler until brown and bubbly, flip it over and do the other side the same.We also do it on our grill instead of using the broiler. I personally don't like mustard or anything sweet but this is something truely different.It isn't really sweet nor do you taste the mustard it changes into something very unique.My family and I are glad I took a chance on it and made it.It is our favorite way of eating corned beef.Also instead of cooking the cabbage with the beef we slice it into 1/2 inch slices and sautee it in butter on the side. I hope you enjoy this as much as our family does.

chicken salad- bunny food!

Phase 2! We can add melon to breakfast. These eggs were delicious. Jamie mixed in leftover fajita  meat, delicious!
Mixing up some chicken salad- using sour cream,  greek yogurt, and olive oil rather than mayo

The radish salad in the middle was really good.
I chopped radishes, onion together and stirred in olive oil, apple cider vinegar, stevia, sea salt, garlic.

we are drinking a lot of lemon water and herbal tea! I mean a LOT!
