2 eggs at room temperature
1 tbs freshly squeezed lemon juice
1/4 t sea salt
1 1/4 c safflower or virgin olive oil
Combine all ingredients except oil in blender at high speed for 1 minute. Slowly add oil. Store in glass jar. Refrigerate.
This will be nice to use in coleslaw, on eggs, chicken salad, etc. It is a long way from "miracle whip", but it will do for now. The olive oil I used was probably too strong of a taste for this. I'll try something milder next time.
