Pretend Oatmeal Cookies

1/2 c butter
2 eggs
1 t  vanilla
1/2 c greek yogurt
3 droppers full of stevia

3/4 c coconut flour
3/4 c brown rice flour
1 c oatmeal
2 t flax meal
1 t salt
1 t baking powder
1 t baking soda
1 t cinnamon
1 t nutmeg
1 t ginger

mix
blob small spoonfuls on cookie sheets
Bake at 375 for 8 minutes

comments: I may have accidently put in the salt twice :) Next time I will try to remember to add xanthan gum, and maybe some sour cream or apple sauce for more moisture. Maybe I could make shift some kind of cream cheese frosting.

Muffins, and more muffins- no sugar, no milk, no wheat

Note to self: need to try cheese muffins, Jamie prefers blueberry muffins, Jena prefers Strawberry, pecan muffins
For all the muffin: You know the drill. Mix the dry stuff, mix the wet stuff. Mix them together (I use one of those pastry cutter things sometimes). Don't over mix- leave it a little lumpy. Oil the muffin tins a smidge.
