- Donna Kelly, a blogger for Utah Valley’s Daily Herald, suggests a simple recipe forcampfire-fresh muffins. Simply hollow out fresh oranges, fill one half with blueberry muffin batter, cover with the empty orange half, wrap in tin foil, and place directly in the fire (not on the grill) for about 10 minutes. For an even healthier treat, make your own muffin batter instead of using a mix.

Jamie's scrambled eggs in the morning, apple walnut cake at night...
| Jamie fixed delicious scrambled eggs for breakfast. He used colored peppers, bacon, onion, and threw in some of the leftovers- rice and tomato. Loved it! |

| peel 'em up |
| butter, walnuts, olive oil- I melted them together a bit in the oven, then stirred in some oat flour and flax meal |
| sliced apples on top (2 green apples), pop it back in the oven while you make the batter |
| making the batter- coconut flour, oat flour, soda, powder, salt, cinnamon, nutmeg, allspice, ginger, 2 eggs, coconut milk, 3 pkg of stevia |

Muffins, and more muffins- no sugar, no milk, no wheat
| Note to self: need to try cheese muffins, Jamie prefers blueberry muffins, Jena prefers Strawberry, pecan muffins |
Apple Muffins
baked at 375 for 10-15 minutes (convection oven)
1 c. brown rice flour
1 c. oat flour
1/2 c. coconut flour
2 t. baking powder
1/2 t. baking soda
1/2 t. cinnamon
1 t. allspice
1/2 t. kosher salt
2 t. xanthan gum
2 t. flax meal
1 beaten egg
1/2 c. rice milk
*1/4 c. coconut oil (I put it in as a liquid- and it solidified a bit when added to the milk and egg)
3/4 c. chopped green apples
Oatmeal Muffins
375 for 15-20 minutes
1 c. flour (used 1/2 c. oat flour 1/2 c. brown rice)
2 t. baking powder
1/2 t. baking soda
1/2 t. cinnamon
1/2 t. kosher salt
pinch of xanthan
3 pks of stevia
1 T. flaxmeal
1 egg beaten
1/2 c. rice milk
1/4 c. olive oil
Strawberry Muffins
375 for 25 min.
1/2 t. kosher salt
2 t. baking powder
3 pk stevia
1/4 c. oil
1/2 c. rice milk
1 t apple cider vinegar
1 egg or 1/4 c greek yogurt
1 c. chopped strawberries
