Breakfast, Lunch, Dinner...

A typical breakfast seems to be either eggs, or oatmeal- we are falling into a pattern.
For lunch today we were craving peanut butter and jelly. So, here is my improvise:

chop almonds in the food processor

stream in olive oil
To make Almond Butter-
Put almonds in food processor and chop- stream in olive oil until smooth (mine turned out a little runny).
I added a very more almonds in the end, so there would be a little more texture- chunkyness.
I also added a pack of stevia, and some kosher salt

almond butter

mix almond butter with ricotta cheese

sliced strawberries

smoosh them up

spread the almond mixture on rice cake, top with strawberries

Tah Dah! PBJ- in a way...

Jamie's scrambled eggs in the morning, apple walnut cake at night...

Jamie fixed delicious scrambled eggs for breakfast.
He used colored peppers, bacon, onion, and threw in some of the leftovers- rice and tomato. Loved it!

butter, walnuts, olive oil-  I melted them together a bit in the oven, then stirred in some oat flour and flax meal

sliced apples on top (2 green apples), pop it back in the oven while you make the batter
making the batter- coconut flour, oat flour, soda, powder, salt, cinnamon, nutmeg, allspice, ginger, 2 eggs, coconut milk, 3 pkg of stevia 
Wow! This is a wonderful treat!

 We added a little cheese to our diet today. We were pretty excited about it. We'll see how that goes... We have been on the diet for about a month now. 
We're a little leery about adding things, it's not like we're feeling much better yet. I actually have had the most benefit so far. My hot flashes are gone and I am off the medications for them. I am starting to get some energy back. My husband thinks he is having less headaches, but he still has a daily low-grade headache. Our daughter is still very sick, however, and rarely well enough to leave the house. The Dr. added more supplements for her. We're hoping they help. One of them, though will increase the "die off", so she may feel even worse before she feels better. She may feel flu symptoms, with nausea and fever. She was very dizzy yesterday, and was in bed most of the day. Today should be better.
There is a powder for chronic fatigue that you mix with liquid. We tried it in water, in smoothie, and in hot tea. It mixed the best with the tea. 

The smoothies for this breakfast turned out great.
I used the smoothie that I had frozen the other day:
put it in the blender and added
2 handfuls of frozen strawberry slices
rice milk- @ 1 c
1 dropper full of stevia
blended on low for 1 minute

Eggs
olive oil
brown together in pan:
bacon
1 green pepper
2 green onions
whip 9 eggs together and add to veggies
sprinkle in pepper and k salt
when almost done top with slices of montery jack and colby cheese
fold eggs in half so cheese melts on the inside

serve with fresh parsley and tomatoes

I like mine with berries, whipping cream, and chopped almonds. He likes his with berries, and rice milk. I like licorice tea. He likes chamomile.

3 weeks in!

We are 3 weeks into this DIET.  We have stuck with MEVY (meat, eggs, vegetables, yogurt) as best as we can. There are a few things I'm a confused about, but I am learning little by little. I hope by creating this blog I can find other bloggers on the same diet.

Today for breakfast we had scrambled eggs with spinach, tomatoe, onions. mini meatloaves left over from last night, a lemon gravy sauce. We used left over apple pancakes from yesterday for our bread- ate them cold. herbal tea, and lemon water.

I think adding pics will help. I'll try adding a pic at dinner.
I am trying to drink as much lemon water and herbal tea as possible.
I add the apple vinegar, and either olive oil or coconut oil to just about everything I can.
I read last night to try to eat about 3 cups of yogurt a day- it has to be organic greek yogurt.

Last night I soaked dried chick peas and a bean mix.
This morning I cooked down the bean mix in a pan- then I added a little salt and av (apple vinegar). I poured it in a bread pan and popped it in the oven for about 11/2 hours.
I also cooked down the chick peas, added garlic, salt. Then popped it all in the food processor, added evoo (extra virgin olive oil), juice of one lemon, and a little more salt. blended till smooth- DELICIOUS! I think it turned out way better using dried bean than canned beans, why is that? or is it my imaginination?
