Pesto flat bread, and icing for the cookies


We are having leftover lasagna tonight, so I made some bread to go with it. I'm not so sure I remember what all I put in it, or how much... Next time I will measure and pay better attention. I had too many distractions.

Pesto Flat Bread

1 c oat flour
1 c garbanzo bean flour
1 t salt
1 t baking soda
1 t baking powder
1 1/2 t xanthan powder
2 T flax meal

1/4 c pesto (I had some of my parsley pesto left)
1/4 c sour cream
1 1/2 T minced garlic
1 T minced sundried tomatoes
2 beaten eggs
1/2 c coconut milk

Spread on the stone pizza pan, press down with parchment paper- it's pretty sticky
Bake at 375 for 10-15 minutes

Cut into thin slices- Yum!

Yesterday's pretend oatmeal cookies needed a little something more...
Cream Cheese Icing 

beat together:  Cream Cheese, butter, cinnamon, stevia, lemon juice squeezed from 2 wedges

whip it up!


Wanna cookie? with icing? Nice treat for the sugar deprived!

Lasagna and Pretend Oatmeal Cookies

add the rice lasagna

mix the ricotta with the egg

shred the cheese

ingredients ready to layer

Lasagna *reminder- cheese is phase 2*

Rice Lasagna noodles-  boil for @ 10 minutes

Ricotta Cheese- mix with 1 egg

Shredded Monterey Jack Cheese

Tomato Sauce

Saute 2 green peppers, garlic, 1 sweet onion, 1 lb. ground turkey, add 6 tomatoes cook some more
Pour in 1 can diced tomatoes, and 1 small can tomato paste
Spice it up with salt, pepper, basil, oregano, 2 bay leaves

Layer it all together
Pop into 350 oven for 30 minutes
Turned out great!

ready to eat- it's best if you let it sit for a bit before cutting into it

Pretend Oatmeal Cookies


1/2 c butter
2 eggs
1 t  vanilla
1/2 c greek yogurt
3 droppers full of stevia

3/4 c coconut flour
3/4 c brown rice flour
1 c oatmeal
2 t flax meal
1 t salt
1 t baking powder
1 t baking soda
1 t cinnamon
1 t nutmeg
1 t ginger

mix
blob small spoonfuls on cookie sheets
Bake at 375 for 8 minutes

comments: I may have accidently put in the salt twice :) Next time I will try to remember to add xanthan gum, and maybe some sour cream or apple sauce for more moisture. Maybe I could make shift some kind of cream cheese frosting.
