more no sugar meals....

Soup- another veggie version
To use up vegetable simply grind them up in the food processor, add water and broth
For this soup I used carrots, tomatoes, onion, celery... I left the broccoli whole

Italian Sausage
this sausage is sugar free, soy free, wheat free, no nitrates and all natural

Brown the sausage in olive oil, and coconut oil
add a little apple cider vinegar
brown the onions and garlic
add some beef broth to simmer

Breads, custard, simple dinner

1 C almond butter, 1 C ricotta cheese, 1 C oat flour, 1 egg, 1 t baking powder

 Slight Revisions to the carrot bread... see labels for recipe

ginger with the nutmeg and cinnamon, oat flour instead of rice flour,
added whipping cream to make the batter not quite so thick

Baked in a cake pan, topped with shredded carrot, chopped walnuts,  cinnamon, 1 pkg stevia

Ingredients

  • 4 large eggs
  • 1/2 cup granulated sugar (I used Stevia)
  • 1/2 teaspoon salt
  • 1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk (I used whipping cream)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • ground nutmeg

Sliced apples with 2 dips
Almond Butter (see labels for recipe)
Carrot Dip- Shredded carrots blended into 1/2 C ricotta cheese and 1/2 C sour cream, and a bit of nutmeg

Simple dinner- Guacamole salad- Assorted lettuce and spinach, chopped celery, alfalfa sprouts, chopped tomatoes, guacamole dressing (see labels for recipe)

Breakfast, Lunch, Dinner...

A typical breakfast seems to be either eggs, or oatmeal- we are falling into a pattern.
For lunch today we were craving peanut butter and jelly. So, here is my improvise:

chop almonds in the food processor

stream in olive oil
To make Almond Butter-
Put almonds in food processor and chop- stream in olive oil until smooth (mine turned out a little runny).
I added a very more almonds in the end, so there would be a little more texture- chunkyness.
I also added a pack of stevia, and some kosher salt

mix almond butter with ricotta cheese

sliced strawberries

smoosh them up

spread the almond mixture on rice cake, top with strawberries

Tah Dah! PBJ- in a way...
