- Donna Kelly, a blogger for Utah Valley’s Daily Herald, suggests a simple recipe forcampfire-fresh muffins. Simply hollow out fresh oranges, fill one half with blueberry muffin batter, cover with the empty orange half, wrap in tin foil, and place directly in the fire (not on the grill) for about 10 minutes. For an even healthier treat, make your own muffin batter instead of using a mix.

Breads, custard, simple dinner
| 1 C almond butter, 1 C ricotta cheese, 1 C oat flour, 1 egg, 1 t baking powder |
| little bitty spoonfuls of batter for mini muffins |
| after they bake- testing doneness with the toothpick |
| Almond Butter Mini Muffins, ready for snacking- they go fast! |
| ginger with the nutmeg and cinnamon, oat flour instead of rice flour, added whipping cream to make the batter not quite so thick |
| Baked in a cake pan, topped with shredded carrot, chopped walnuts, cinnamon, 1 pkg stevia |

Ingredients
- 4 large eggs
- 1/2 cup granulated sugar (I used Stevia)
- 1/2 teaspoon salt
- 1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk (I used whipping cream)
- 1 cup water
- 1 teaspoon vanilla extract
- ground nutmeg

Pesto flat bread, and icing for the cookies
We are having leftover lasagna tonight, so I made some bread to go with it. I'm not so sure I remember what all I put in it, or how much... Next time I will measure and pay better attention. I had too many distractions.
Pesto Flat Bread
1 c oat flour
1 c garbanzo bean flour
1 t salt
1 t baking soda
1 t baking powder
1 1/2 t xanthan powder
2 T flax meal
1/4 c pesto (I had some of my parsley pesto left)
1/4 c sour cream
1 1/2 T minced garlic
1 T minced sundried tomatoes
2 beaten eggs
1/2 c coconut milk
Spread on the stone pizza pan, press down with parchment paper- it's pretty sticky
Bake at 375 for 10-15 minutes

beat together: Cream Cheese, butter, cinnamon, stevia, lemon juice squeezed from 2 wedges

Cheese biscuits
| Gathering ingredients |
3/4 c coconut flour
3/4 c oat flour
2 big t flaxseed meal
1 t xanthan gum
1 t baking soda
1 t baking powder
1 t kosher salt
mix dry ingredients together
1/2 c butter
cut in butter
1/2 c sour cream
1/2 c greek yogurt
1 t apple cider vinegar
mix in wet ingredients
bake in 350 oven for 30 minutes
remove from oven and brush on butter, sprinkle with garlic powder, sprinkle with cut up colby cheese
return to oven until cheese melts

Carrot Bread ****WINNER***
Carrot Bread
1/2 cup butter
3 dropper fulls of stevia
2 eggs
1 teaspoon vanilla
3/4 cup coconut flour, 3/4 c brown rice flour
1 teaspoon baking soda
1/2 teaspoon salt
1t baking powder
2 heaping t of flax meal
1/2 t xanthan powder
1t cinnamon
1 t nutmeg
1 1/2 cup shredded carrots
1/2 cup sour cream
1/2 cup greek yogurt
1/2 cup chopped walnuts
Takes 60 minutes at 350F in my oven
This is our favorite bread so far

Zucchini Bread
1/2 cup margarine or butter
2 eggs
1 teaspoon vanilla
2 dropper fulls of stevia
1 1/2 cups flour (3/4 cup oat flour, 3/4 c brown rice flour)
1 teaspoon baking soda
1/2 teaspoon salt
1t baking powder
2 heaping t of flax meal
1/2 t xanthan powder
1t cinnamon
1 t nutmeg
1 cup grated zucchini
1/2 cup sour cream
1/2 cup chopped pecans
Takes 60 minutes at 350F in my oven.
Our favorite bread so far!

Mix in brown rice elbow noodles (already cooked and drained) |

| oil a casserole dish with olive oil |
| Mac and cheese into casserole |
| top with paprika and pop in the oven for about 30 minutes or so |

Recipe for Sandwich Flat Bread
mix dry ingredients together
3/4 c oat flour
3/4 c brown rice flour
3 t baking powder
1 t kosher salt
3 packs of stevia
oops. I might have added a t of xanthan gum- I can't remember, sorry!
add 1 beaten egg
3/4 c homemade mayo
@ 3/4 c cold cooked rice cereal (leftover from brkfst)
mix each in
then add whipping cream until the right conistency- not too sticky
Press into an oiled pizza pan

Fake Biscuits
Biscuits
400 degree oven
25-30 minutes
2 c. brown rice flour
1 t. baking soda
1/4 c coconut oil or olive oil
1/4 t sea salt
2 T flax meal
optional 2 t stevia, chopped walnuts
mix together
add water to form dough
press between parchment paper
cut into squares, or use round biscuit cutter
400 degree oven
25-30 minutes

1/2 c. flax meal (this seemed like too much- try reducing to 1/4 c.)

1/2 t koser salt
2 t baking powder
6 T olive oil (coconut oil, or ghee)
1/2 c. water (approx)
mix dry ingredients, slowly until right consistency- not sticky
spread on parchment paper on cookie sheet-
press down very thin
score and top with kosher salt
bake at 400 for 25- 30 min

1/2 c. coconut flour

1/2 t. baking soda
1/2 t. cinnamon
1 t. allspice
1/2 t. kosher salt
2 t. xanthan gum
2 t. flax meal
1 beaten egg
1/2 c. rice milk
*1/4 c. coconut oil (I put it in as a liquid- and it solidified a bit when added to the milk and egg)
3/4 c. chopped green apples
Oatmeal Muffins
375 for 15-20 minutes
1 c. flour (used 1/2 c. oat flour 1/2 c. brown rice)
2 t. baking powder
1/2 t. baking soda
1/2 t. cinnamon
1/2 t. kosher salt
pinch of xanthan
3 pks of stevia
1 T. flaxmeal
1 egg beaten
1/2 c. rice milk
1/4 c. olive oil
Strawberry Muffins
375 for 25 min.
1/2 t. kosher salt
2 t. baking powder
3 pk stevia
1/4 c. oil
1/2 c. rice milk
1 t apple cider vinegar
1 egg or 1/4 c greek yogurt
1 c. chopped strawberries
